Miniature Peanut Butter and Jelly Sandwich Cookies

Brought to us by Erica of Sweet Tooth and Tooth Cupcake fame, are Peanut Butter and Jelly Cookie Sandwiches. Using a recipe for peanut butter cookie dough to form the ‘bread,’ a jam of your choice can be placed in-between to recreate your favorite PB&J in cookie form.
