With help from the Union Square Greenmarket and Photoshop, Malaysian-born artist Tattfoo Tan created the Nature Matching System. By photographing produce and then pinpointing colors using Photoshop’s eyedrop tool, Tan created a sort of Pantone swatch book for nutrition.
But instead of matching spot and process colors like Pantone, the NMS and its 88 colors represent naturally occurring phytochemicals and beneficial nutrients — encouraging us to eat by color.
